Skillet Sausage and Potatoes

First, the recipe:

This recipe requires at least 2 large frying pans.

Technically this recipe is for 4 people, but realistically feeds 2 with one plate left over for tomorrow's lunch. Get out the griddle if you need more cooking space.

- Ingredients -

14 oz. beef Polska Kielbasa, sliced long ways down the middle and then sliced into 1/4 inch pieces (make little half moons)

2 lb. gold or russet potatoes, sliced thickly and cut into 1 inch pieces

1/2 yellow sweet onion, al gusto (sliced, diced, or grated)

~2 tablespoons of bacon grease (recommended) or butter

1 1/2 teaspoons sage

4 cloves garlic, minced or grated

salt and pepper, to taste

optional: cayenne or hot sauce, to taste

- Directions -

1. Heat bacon grease or butter over medium heat in the two pans, and add in sliced potatoes. Brown potatoes, stirring occasionally.

2. When potatoes are about 85% done, add sausage and onion.

3. Continue to stir and cook until sausage is heated and onions are translucent.

4. Add sage, salt and pepper, and hot sauce. Wait until the last minute of cooking to add the garlic, then stir fry continuously for that minute. Serve with ketchup.

Welcome to my blog! I want to commemorate my first post by adding the recipe that inspired me to begin my collection. I went to find one of my favorite old recipes I had saved on Pinterest, because I just remembered I hadn't made it in at least a year. To my dismay, clicking on the link led me to a domain that had been spirited away. Luckily I was able to use my (I'd like to say above average) googling skills to find a copy of the recipe. I've updated it with my personal preferences and notes and now I send it out to the universe, hopefully to have a longer stay than the original. Enjoy!
